- 2 cups rolled oats
- 1 1/2 cups grated carrots
- 1 1/2 cups diced apples
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- 2 cups almond milk (or milk of choice)
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp baking powder
- 1/4 tsp salt
- Optional: 1/4 cup shredded coconut
- Optional: 1/4 cup chia seeds
- Optional: 1/4 cup flaxseeds
- Optional: 1/4 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large mixing bowl, combine the rolled oats, grated carrots, diced apples, chopped walnuts, and raisins. Stir to mix well.
- In a separate bowl, whisk together the almond milk, eggs, honey (or maple syrup), vanilla extract, cinnamon, nutmeg, baking powder, and salt until well combined.
- Pour the wet ingredients over the oat mixture and stir until all ingredients are evenly coated.
- Transfer the mixture into the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for 35–40 minutes, or until the top is golden brown and the center is set.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
For added flavor, toast the walnuts before mixing. Use a mix of apple varieties for depth. Avoid overbaking to keep the bake moist.
