  • 2 cups almond milk (or milk of choice)

  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Optional: 1/4 cup shredded coconut
  • Optional: 1/4 cup chia seeds
  • Optional: 1/4 cup flaxseeds
  • Optional: 1/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine the rolled oats, grated carrots, diced apples, chopped walnuts, and raisins. Stir to mix well.
  3. In a separate bowl, whisk together the almond milk, eggs, honey (or maple syrup), vanilla extract, cinnamon, nutmeg, baking powder, and salt until well combined.
  4. Pour the wet ingredients over the oat mixture and stir until all ingredients are evenly coated.
  5. Transfer the mixture into the prepared baking dish, spreading it out evenly.
  6. Bake in the preheated oven for 35–40 minutes, or until the top is golden brown and the center is set.
  7. Remove from the oven and let it cool for a few minutes before serving.

Notes

For added flavor, toast the walnuts before mixing. Use a mix of apple varieties for depth. Avoid overbaking to keep the bake moist.
