  • 8 slices of rye or sourdough bread
  • 1 large onion, thinly sliced
  • 8 slices of vegan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon vegan butter
  • Salt and pepper, to taste
  • Optional: 1 avocado, sliced
  • Optional: 1 tomato, sliced
  • Optional: Handful of spinach or arugula
  • Optional: Pickles or jalapeños

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onions, season with salt, and cook until soft and golden brown, about 15-20 minutes.
  2. While onions cook, heat the remaining oil in another skillet over medium-high heat. Cook the vegan patties for 3-4 minutes per side, or as per package instructions.
  3. Remove patties and set aside. In the same skillet, melt vegan butter over medium heat.
  4. To assemble, place one slice of vegan cheese on each slice of bread. Top four slices with a cooked patty and a generous portion of caramelized onions.
  5. Top with remaining bread slices to form sandwiches.
  6. Place sandwiches in the skillet and cook 3-4 minutes per side until bread is golden and cheese is melted. Press gently with a spatula while cooking.
  7. Remove from skillet, cool slightly, slice, and serve warm.
