A hearty, plant-based twist on the classic patty melt, featuring vegan patties, gooey dairy-free cheese, and perfectly caramelized onions between golden slices of toasted bread.

- 4 vegan burger patties
- 8 slices of rye or sourdough bread
- 1 large onion, thinly sliced
- 8 slices of vegan cheese
- 2 tablespoons olive oil
- 1 tablespoon vegan butter
- Salt and pepper, to taste
- Optional: 1 avocado, sliced
- Optional: 1 tomato, sliced
- Optional: Handful of spinach or arugula
- Optional: Pickles or jalapeños
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onions, season with salt, and cook until soft and golden brown, about 15-20 minutes.
- While onions cook, heat the remaining oil in another skillet over medium-high heat. Cook the vegan patties for 3-4 minutes per side, or as per package instructions.
- Remove patties and set aside. In the same skillet, melt vegan butter over medium heat.
- To assemble, place one slice of vegan cheese on each slice of bread. Top four slices with a cooked patty and a generous portion of caramelized onions.
- Top with remaining bread slices to form sandwiches.
- Place sandwiches in the skillet and cook 3-4 minutes per side until bread is golden and cheese is melted. Press gently with a spatula while cooking.
- Remove from skillet, cool slightly, slice, and serve warm.
Notes
Preheat the skillet properly before toasting the sandwiches for a crisp crust. Covering the skillet helps the vegan cheese melt evenly. Avoid overcrowding the pan to ensure even cooking.
