Instructions

  1. Place bulgur wheat in a large bowl and pour boiling water over it. Cover and let sit for 30 minutes or until tender and water is absorbed.
  2. Finely chop parsley and mint.
  3. Dice tomatoes, cucumber, and scallions. Prepare optional ingredients if using.
  4. Fluff bulgur with a fork once ready and let cool to room temperature.
  5. In a large mixing bowl, combine bulgur, parsley, mint, tomatoes, cucumber, and scallions. Toss gently.
  6. Whisk lemon juice, olive oil, salt, and pepper in a small bowl. Pour over salad and mix well.
  7. Gently fold in any optional add-ins like feta, pine nuts, or bell peppers.
