- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 medium carrot, sliced
- 1 stalk celery, sliced
- 2 cups chicken broth
- 1 cup water
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- 1/2 pound boneless, skinless chicken breast, diced
- 1 cup egg noodles
- Salt and pepper to taste
- Optional: 1/2 cup frozen peas
- Optional: 1/2 cup corn kernels
- Optional: 1/4 cup chopped fresh parsley
- Optional: Lemon wedge for serving
Instructions
- Dice the onion, mince the garlic, slice the carrot and celery, and dice the chicken breast.
- Measure out the broth and water, and gather your spices.
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic, sauté for 3-4 minutes until translucent.
- Add sliced carrot and celery, cook for another 2-3 minutes until softened.
- Pour in chicken broth and water. Add bay leaf, thyme, and parsley. Bring to a boil.
- Add diced chicken breast, reduce heat, and simmer for 10 minutes until chicken is cooked through.
- Stir in egg noodles, simmer for 8-10 minutes until noodles are tender.
- Optional: Add peas and corn, cook for 2 more minutes.
- Season with salt and pepper. Remove bay leaf before serving.
Notes
For extra flavor, use homemade broth or add a splash of white wine. Avoid overcooking the noodles to maintain texture.
