  • Author: Sophie
  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Description

A simple, protein-packed breakfast bake made with fluffy eggs and creamy cottage cheese. Perfect for any time of day and easy to customize!

Ingredients

Scale
  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/2 cup diced bell peppers
  • Optional: 1/2 cup chopped spinach
  • Optional: 1/4 cup diced cooked bacon or ham
  • Optional: 1/4 cup chopped onions
  • Optional: 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a medium-sized baking dish with butter or cooking spray.
  2. In a large bowl, whisk together the eggs, cottage cheese, shredded cheddar cheese, milk, salt, and black pepper until well combined.
  3. If using optional ingredients, gently fold them into the egg mixture.
  4. Pour the egg mixture into the prepared baking dish and spread it evenly.
  5. Bake for 30-35 minutes, or until the top is golden and the center is set.
  6. Let cool slightly before slicing and serving.

Notes

Thoroughly whisking the eggs helps keep the bake fluffy. Don’t overbake to avoid dryness. Make sure to drain the cottage cheese if it’s too watery.
