Ingredients

  • 1 cup gram flour (besan)
  • 1/2 cup water (adjust as needed)
  • 1 medium onion, thinly sliced
  • 1 medium potato, thinly sliced
  • 2 green chilies, finely chopped
  • 1 tablespoon coriander seeds, crushed
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Oil for deep frying
  • Optional: 1/2 cup spinach leaves, finely chopped
  • Optional: 1/4 cup fresh coriander leaves, chopped
  • Optional: 1 teaspoon ajwain (carom seeds)
  • Optional: A pinch of baking soda

Instructions

  1. Thinly slice onion and potato. Chop green chilies, spinach, and coriander leaves (if using).
  2. In a bowl, mix gram flour, turmeric, red chili powder, coriander seeds, cumin seeds, and salt.
  3. Gradually add water to form a thick, smooth batter.
  4. Fold in sliced vegetables and optional greens and baking soda.
  5. Heat oil in a deep pan over medium-high heat.
  6. Drop spoonfuls of batter into hot oil. Don’t overcrowd the pan.
  7. Fry until golden brown, about 5–7 minutes, flipping occasionally.
  8. Remove and drain on paper towels.
  9. Repeat until all batter is used. Keep fried bhajiyas warm if needed.

Notes

Ensure oil is at the right temperature before frying. For extra crispiness, double-fry. Experiment with spices, and avoid overcrowding the pan for best results.
