Description
A beloved Indian snack, crispy bhajiyas are deep-fried vegetable fritters bursting with flavor and texture perfect for tea-time or rainy-day indulgence.

- 1 cup gram flour (besan)
- 1/2 cup water (adjust as needed)
- 1 medium onion, thinly sliced
- 1 medium potato, thinly sliced
- 2 green chilies, finely chopped
- 1 tablespoon coriander seeds, crushed
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- Oil for deep frying
- Optional: 1/2 cup spinach leaves, finely chopped
- Optional: 1/4 cup fresh coriander leaves, chopped
- Optional: 1 teaspoon ajwain (carom seeds)
- Optional: A pinch of baking soda
Instructions
- Thinly slice onion and potato. Chop green chilies, spinach, and coriander leaves (if using).
- In a bowl, mix gram flour, turmeric, red chili powder, coriander seeds, cumin seeds, and salt.
- Gradually add water to form a thick, smooth batter.
- Fold in sliced vegetables and optional greens and baking soda.
- Heat oil in a deep pan over medium-high heat.
- Drop spoonfuls of batter into hot oil. Don’t overcrowd the pan.
- Fry until golden brown, about 5–7 minutes, flipping occasionally.
- Remove and drain on paper towels.
- Repeat until all batter is used. Keep fried bhajiyas warm if needed.
Notes
Ensure oil is at the right temperature before frying. For extra crispiness, double-fry. Experiment with spices, and avoid overcrowding the pan for best results.
