- Optional: 1/4 cup chopped green onions
- Optional: 1/4 cup diced mushrooms
- Optional: 1/4 teaspoon garlic powder
Instructions
- Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin or line with muffin liners.
- In a large bowl, whisk together eggs, cottage cheese, and baking powder until well combined.
- Stir in shredded cheddar cheese, chopped spinach, diced red bell pepper, and any optional add-ins.
- Season with salt and pepper to taste.
- Pour mixture evenly into muffin tin, filling each about 3/4 full.
- Bake for 20–25 minutes or until muffins are puffed and golden brown.
- Cool in tin for a few minutes, then transfer to a wire rack.
- Serve warm or store for later.
Notes
Use freshly shredded cheese for better melting and avoid overbaking to keep the muffins moist. Generously grease your muffin tin or use liners to prevent sticking.
