A delightful Korean treat known as ‘hodu-gwaja’ featuring crunchy walnuts and a soft cake-like exterior, perfect for tea time or dessert.

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 2 large eggs
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup walnuts, chopped
- 1 cup sweetened red bean paste
- Optional: 1/4 cup mini chocolate chips
- Optional: 1/4 cup chopped dried fruits (cranberries or apricots)
- Optional: 1/4 cup cream cheese, softened
Instructions
- Preheat walnut-shaped mold over medium heat or prepare a muffin tin as alternative.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat sugar and eggs until light and fluffy (3–4 minutes).
- Add milk, melted butter, and vanilla extract; mix well.
- Fold in dry ingredients until just combined—do not overmix.
- Gently fold in chopped walnuts.
- Lightly grease mold cavities with butter or spray.
- Spoon small amount of batter into each cavity, filling halfway.
- Top each with 1 tsp red bean paste (or filling of choice).
- Cover with more batter to fill completely.
- Close mold and cook for 3–5 minutes per side until golden brown.
- Remove pastries and let cool slightly before serving.
Notes
Use room temperature eggs and milk for smooth batter. Do not overfill mold to avoid overflow. Cook on moderate heat to ensure even doneness.
