  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish
  • Optional: 1 cup spinach or kale
  • Optional: 1 zucchini, diced
  • Optional: Mushrooms, sliced
  • Optional: 1/2 cup red wine

Instructions

  1. Gather all your ingredients. Dice the onion, mince the garlic, and chop the bell pepper. Break lasagna noodles into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat. Add ground turkey and cook until browned, breaking it apart.
  3. Add diced onion, garlic, and bell pepper. Sauté until vegetables are softened, about 5 minutes.
  4. Pour in chicken broth, crushed tomatoes, and tomato paste. Stir well.
  5. Season with basil, oregano, red pepper flakes, salt, and pepper. Bring to a simmer.
  6. Add broken lasagna noodles and cook until tender, about 10–12 minutes.
  7. In a small bowl, mix ricotta, mozzarella, and Parmesan cheeses.
  8. Once noodles are cooked, stir in cheese mixture until melted and combined.
  9. If using, add spinach or kale and allow to wilt. Adjust seasoning as needed.
  10. Ladle into bowls, garnish with fresh parsley and extra Parmesan if desired.

Notes

Avoid overcooking noodles as they can become mushy. Deglaze the pot with red wine for extra depth. Let soup rest a few minutes before serving for best flavor.
