Description
A traditional and fluffy Lebanese pita bread that puffs perfectly and brings the taste of the Middle East to your kitchen.

- 3 1/2 cups all-purpose flour
- 1 cup whole wheat flour
- 1 1/2 teaspoons salt
- 1 tablespoon sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 1/4 cups warm water (110°F/45°C)
- 2 tablespoons olive oil
- 1 tablespoon sesame seeds (optional, for topping)
- 1 teaspoon za’atar spice (optional, for flavoring)
Instructions
- In a small bowl, mix warm water, sugar, and yeast. Let it sit for 10 minutes until frothy.
- In a large bowl, combine all-purpose flour, whole wheat flour, and salt.
- Create a well in the center and add the yeast mixture and olive oil. Stir until a sticky dough forms.
- Knead on a floured surface for 8–10 minutes until smooth and elastic.
- Place dough in a lightly oiled bowl, cover with a damp cloth, and let rise for 1 to 1.5 hours until doubled.
- Punch down the dough, divide into 8 balls, and roll each into a 1/4 inch thick circle.
- Preheat oven to 475°F (245°C) with a baking stone or inverted baking sheet inside.
- Bake each pita on the hot surface for 3–5 minutes until puffed and lightly golden.
- Remove and cover with a clean towel to keep soft while baking remaining bread.
Notes
Ensure the oven is fully preheated and hot before baking. Use a baking stone for even heat and puffed bread. Avoid over-flouring while rolling the dough for best results.
