- 2 cups Basmati rice
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 teaspoons ground turmeric
- 3 1/2 cups vegetable broth
- Salt to taste
- 1/4 cup pine nuts
- 1/4 cup raisins
- Optional: 1/4 cup chopped parsley for garnish
- Optional: 1/4 teaspoon ground cinnamon
- Optional: Lemon wedges for serving
Instructions
- Rinse the Basmati rice under cold water to remove excess starch.
- Soak the rice in cold water for about 20 minutes, then drain.
- Heat olive oil in a large pot over medium heat.
- Sauté the chopped onion until translucent, about 5 minutes.
- Add ground turmeric and stir until onions are well-coated.
- Add drained rice and stir to combine.
- Pour in vegetable broth and add salt to taste.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
- Toast pine nuts in a small pan over medium heat until golden brown.
- Fluff the cooked rice with a fork, then gently fold in pine nuts and raisins.
- Garnish with chopped parsley and serve with lemon wedges if desired.
Notes
Use Basmati rice for best texture. Toasting pine nuts enhances flavor. Avoid overcooking to keep rice fluffy and separate.
