  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups beef or lamb stock
  • 1 cup canned tomatoes, crushed
  • 1/2 cup dried apricots, chopped
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lemon
  • Optional: 1/2 cup slivered almonds
  • Optional: 1/4 cup green olives, pitted and sliced
  • Optional: 1/4 cup raisins
  • Optional: 1 tablespoon honey (for added sweetness)

Instructions

  1. In a large bowl, combine lamb with yogurt, cumin, coriander, cinnamon, paprika, turmeric, salt, and pepper. Mix to coat. Marinate in the refrigerator for at least 2 hours or overnight.
  2. Chop onion, mince garlic, and prepare apricots and any optional ingredients.
  3. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until translucent, about 5 minutes.
  4. Add marinated lamb and sear until browned on all sides, about 6–8 minutes.
  5. Pour in stock and crushed tomatoes. Stir and bring to a simmer.
  6. Add chopped apricots and any optional add-ins like almonds or olives. Cover and simmer on low heat for 1.5 to 2 hours until lamb is tender and sauce thickens.
  7. Stir in lemon juice and garnish with fresh cilantro before serving.

Notes

For best results, marinate the lamb overnight. Fresh spices and slow simmering are key to deep, rich flavor. Adjust salt if using olives or salty stock.
