A savory twist on the classic, this Moroccan Shepherd’s Pie blends spiced lamb with dried fruits and a creamy mashed potato topping for an exotic and comforting meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 500g ground lamb
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon tomato paste
  • 400g can of chopped tomatoes
  • 100g dried apricots, chopped
  • 200ml lamb or chicken stock
  • Salt and pepper to taste
  • 1kg potatoes, peeled and diced
  • 50g butter
  • 100ml milk
  • Chopped fresh parsley for garnish
  • Optional: 50g raisins for added sweetness
  • Optional: Chopped fresh cilantro for garnish
  • Optional: 1 teaspoon chili flakes for heat

Instructions

  1. Finely chop the onion, mince the garlic, and chop the dried apricots.
  2. Peel and dice the potatoes, place them in cold salted water, bring to a boil, and cook until tender.
  3. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent.
  4. Add the ground lamb, breaking it up with a spoon, and cook until browned.
  5. Stir in cumin, coriander, and cinnamon; cook 1 more minute until fragrant.
  6. Add tomato paste, chopped tomatoes, dried apricots, and stock. Season with salt and pepper and simmer for 20 minutes until thickened.
  7. Drain the cooked potatoes and mash with butter and milk until smooth. Season with salt.
  8. Preheat oven to 200°C (400°F).
  9. Transfer lamb mixture to a baking dish, top with mashed potatoes, and smooth the surface.
  10. Bake for 25 minutes or until the top is golden brown.
  11. Garnish with fresh parsley before serving.

Notes

For deeper flavor, brown the lamb thoroughly. Ensure mashed potatoes are smooth for best texture. Spice amounts can be adjusted to taste.
