A savory twist on the classic, this Moroccan Shepherd’s Pie blends spiced lamb with dried fruits and a creamy mashed potato topping for an exotic and comforting meal.

- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 500g ground lamb
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1 tablespoon tomato paste
- 400g can of chopped tomatoes
- 100g dried apricots, chopped
- 200ml lamb or chicken stock
- Salt and pepper to taste
- 1kg potatoes, peeled and diced
- 50g butter
- 100ml milk
- Chopped fresh parsley for garnish
- Optional: 50g raisins for added sweetness
- Optional: Chopped fresh cilantro for garnish
- Optional: 1 teaspoon chili flakes for heat
Instructions
- Finely chop the onion, mince the garlic, and chop the dried apricots.
- Peel and dice the potatoes, place them in cold salted water, bring to a boil, and cook until tender.
- In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent.
- Add the ground lamb, breaking it up with a spoon, and cook until browned.
- Stir in cumin, coriander, and cinnamon; cook 1 more minute until fragrant.
- Add tomato paste, chopped tomatoes, dried apricots, and stock. Season with salt and pepper and simmer for 20 minutes until thickened.
- Drain the cooked potatoes and mash with butter and milk until smooth. Season with salt.
- Preheat oven to 200°C (400°F).
- Transfer lamb mixture to a baking dish, top with mashed potatoes, and smooth the surface.
- Bake for 25 minutes or until the top is golden brown.
- Garnish with fresh parsley before serving.
Notes
For deeper flavor, brown the lamb thoroughly. Ensure mashed potatoes are smooth for best texture. Spice amounts can be adjusted to taste.
