Ingredients

  • 2 cups ground Egusi (melon seeds)
  • 1 pound beef, cut into bite-sized pieces
  • 1 pound assorted meats (tripe, goat meat, or chicken)
  • 1 smoked fish, deboned and flaked
  • 1 cup palm oil
  • 2 tablespoons ground crayfish
  • 2 tablespoons ground pepper
  • 1 bunch fresh spinach or bitter leaf, washed and chopped
  • 2 medium onions, chopped
  • 4 cups beef stock
  • Salt to taste
  • Seasoning cubes (Maggi or Knorr)
  • Optional: 1 cup pumpkin leaves (ugu)
  • Optional: 1 tablespoon locust beans (iru)
  • Optional: ½ cup shelled prawns

Instructions

  1. Wash all meats thoroughly. Season the beef and assorted meats with salt, one chopped onion, and a seasoning cube. Let marinate for 30 minutes.
  2. Grind the Egusi seeds into a fine powder if not pre-ground. Wash and chop vegetables.
  3. In a large pot, cook the marinated meats in water on medium heat for about 40 minutes until tender. Set meats aside and reserve the stock.
  4. In the same pot, heat palm oil over medium heat. Sauté the remaining chopped onion until translucent.
  5. Add ground Egusi and fry for 5–7 minutes, stirring continuously to prevent burning.
  6. Gradually pour in reserved meat stock while stirring until the Egusi thickens to a paste-like consistency.
  7. Add meats, smoked fish, ground crayfish, and pepper. Mix well and simmer for 10 minutes.
  8. Adjust seasoning with salt and more seasoning cubes if needed.
  9. Add chopped spinach and any optional ingredients like prawns or pumpkin leaves. Simmer for 5 more minutes.
  10. Serve hot with fufu, pounded yam, or rice.

Notes

Roast Egusi seeds before grinding for enhanced flavor. Avoid overcooking vegetables to preserve nutrients and color. Don’t overwater meats initially to keep stock rich.
