- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 can (14 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 pound gnocchi
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
- Optional: 1 cup spinach or kale
- Optional: 1 cup cooked sausage, sliced
- Optional: 1 cup mushrooms, sliced
- Optional: 1/2 cup sun-dried tomatoes, chopped
- Optional: 1 teaspoon smoked paprika
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and red pepper flakes; cook for 1 minute until fragrant.
- Pour in crushed tomatoes and broth; bring to a simmer.
- Add gnocchi and cook for 3-5 minutes until they float to the top.
- Lower the heat and stir in heavy cream and Parmesan cheese until melted and creamy.
- Season with salt and pepper to taste.
- If using spinach or kale, add now and cook until wilted.
- Garnish with fresh basil before serving.
Notes
Use fresh gnocchi for best texture. Adjust red pepper flakes to control spice level. Add a squeeze of lemon juice at the end for brightness.
