  • 2 tablespoons olive oil

  • 3 bell peppers (red, green, or yellow), diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14 ounces) diced tomatoes
  • 4 cups beef broth
  • 1 cup cooked white or brown rice
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: 1 cup corn kernels
  • Optional: 1 cup black beans, drained and rinsed
  • Optional: 1/2 cup shredded cheddar or mozzarella
  • Optional: 1 tablespoon Worcestershire sauce
  • Optional: Fresh basil or parsley for garnish

Instructions

  1. Prepare ingredients: dice onion and bell peppers, mince garlic, and cook rice if needed.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion and bell peppers; cook for 5–7 minutes until softened.
  4. Stir in garlic and cook for 1 minute until fragrant.
  5. Add ground beef; cook until browned, breaking it up as it cooks. Drain excess fat.
  6. Stir in crushed tomatoes, diced tomatoes, and beef broth. Bring to a simmer.
  7. Add cooked rice, Italian seasoning, paprika, salt, and pepper. Stir well.
  8. Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
  9. In the last 10 minutes, add corn, beans, or Worcestershire sauce if using.
  10. Adjust seasoning to taste. Remove from heat and serve hot.
  11. Garnish with shredded cheese and fresh herbs if desired.

Notes

Use different colored peppers for added flavor and presentation. Add rice at the end to avoid it becoming mushy. For extra depth, stir in Worcestershire sauce or a tablespoon of tomato paste. This soup freezes well and tastes even better the next day.
