- 1 can (14 oz) artichoke hearts, drained and quartered
- 1 small red onion, thinly sliced
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons capers, rinsed
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- Salt and pepper to taste

- Optional: 1/4 cup pine nuts, toasted
- Optional: 1 cup arugula or spinach
Instructions
- Wash and dice the tomatoes into bite-sized pieces.
- Drain and quarter the artichoke hearts.
- Thinly slice the red onion and chop the basil leaves.
- Rinse the capers to remove excess salt.
- In a large mixing bowl, combine tomatoes, artichokes, onion, and capers.
- In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- Fold in the chopped basil and adjust seasoning to taste.
- If using, add feta cheese, pine nuts, and arugula for added flavor and texture.
- Let the salad rest for 10 minutes before serving to allow flavors to meld.
