Description

Ingredients

  • 1 ¼ cups warm water
  • 2 ¼ teaspoons active dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons mixed dried herbs (such as oregano, thyme, and basil)
  • Optional: 1 tablespoon poppy seeds for topping
  • Optional: 1 tablespoon sesame seeds for topping
  • Optional: 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. In a small bowl, mix warm water and sugar. Sprinkle the yeast on top and let sit for 5–10 minutes until frothy.
  2. Sauté the minced garlic in olive oil over medium heat until golden and fragrant. Remove from heat and let cool slightly.
  3. In a large bowl, mix flour, salt, mixed herbs, and the garlic oil mixture. Add the yeast mixture and stir to form a shaggy dough.
  4. Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
  5. Place dough in a lightly oiled bowl, cover with a damp cloth, and let rise for 1 hour or until doubled in size.
  6. Punch down dough and divide into 8 pieces. Shape into balls, poke a hole in the center, and stretch to form bagel shapes.
  7. Place on a parchment-lined baking sheet, cover, and let rise for 20–30 minutes.
  8. Preheat oven to 425°F (220°C). Boil a large pot of water. Boil each bagel for 1–2 minutes per side and return to the baking sheet.
  9. Sprinkle with seeds if using. Bake for 20–25 minutes until golden brown.

For best results, ensure your yeast is fresh and the water is warm—not hot. Don’t skip the boiling step, it’s key to achieving that classic bagel texture.
