- 1 cup raw cashews, soaked
- 1/4 cup tapioca starch
- 1/4 cup nutritional yeast
- 1 tablespoon lemon juice
- 1 teaspoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 1/2 cups water
- Optional: 1 teaspoon smoked paprika
- Optional: 1 tablespoon chopped fresh herbs
- Optional: 1 teaspoon chili flakes
Instructions
- Soak raw cashews in hot water for at least 2 hours.
- Drain and rinse the cashews under cold water.
- Blend soaked cashews, tapioca starch, nutritional yeast, lemon juice, apple cider vinegar, garlic powder, onion powder, salt, and water until smooth.
- Pour mixture into a saucepan over medium heat and stir continuously.
- Cook until the mixture thickens and becomes stretchy, about 5–7 minutes.
- Remove from heat and use a small scoop or spoon to form into balls on a parchment-lined tray.
- Refrigerate for at least 1 hour to firm up.
Notes
Blend thoroughly for a smooth texture. Stir constantly while heating to avoid lumps. Adjust herbs and spices to taste.
