Ingredients

  • 1 cup raw cashews, soaked
  • 1/4 cup tapioca starch
  • 1/4 cup nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 1/2 cups water
  • Optional: 1 teaspoon smoked paprika
  • Optional: 1 tablespoon chopped fresh herbs
  • Optional: 1 teaspoon chili flakes

Instructions

  1. Soak raw cashews in hot water for at least 2 hours.
  2. Drain and rinse the cashews under cold water.
  3. Blend soaked cashews, tapioca starch, nutritional yeast, lemon juice, apple cider vinegar, garlic powder, onion powder, salt, and water until smooth.
  4. Pour mixture into a saucepan over medium heat and stir continuously.
  5. Cook until the mixture thickens and becomes stretchy, about 5–7 minutes.
  6. Remove from heat and use a small scoop or spoon to form into balls on a parchment-lined tray.
  7. Refrigerate for at least 1 hour to firm up.

Notes

Blend thoroughly for a smooth texture. Stir constantly while heating to avoid lumps. Adjust herbs and spices to taste.
