- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar (optional for sweet pies)
- 1 cup vegan butter, chilled and cubed
- 1/4 cup ice-cold water
- Optional: 1 tablespoon apple cider vinegar
- Optional: 1 tablespoon ground flaxseed
- Optional: 1 teaspoon vanilla extract (for sweet pies)
Instructions
- Chill vegan butter in the freezer for 15 minutes.
- In a large bowl, whisk together flour, salt, and sugar (if using).
- Add chilled vegan butter to the flour and cut in using fingers or pastry cutter until mixture resembles coarse crumbs.
- Add ice water one tablespoon at a time, gently mixing until dough begins to come together.
- Form dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
- Roll out chilled dough on a floured surface to desired thickness.
- Transfer to pie dish, trim edges as needed.
- For a pre-baked crust, preheat oven to 375°F (190°C), use pie weights, and bake for 15 minutes.
Notes
Handle dough as little as possible to keep it tender. Chill well to prevent shrinking. Patch cracks with extra dough and water if needed.
