- 2 large sweet potatoes (about 2 cups mashed)
- 1 1/2 cups all-purpose flour, plus extra for dusting
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- Optional: 1 tablespoon nutritional yeast
- Optional: 1/2 teaspoon garlic powder
- Optional: Fresh basil or sage leaves for garnish
- Optional: 1 tablespoon olive oil or vegan butter for sautéing
Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and place on a baking sheet. Bake for 45-60 minutes until completely soft.
- Let sweet potatoes cool slightly. Peel and mash until smooth and creamy.
- Add flour, salt, and pepper. Mix until a soft, non-sticky dough forms. Add more flour if needed.
- Divide dough into 4 sections. Roll each into a rope about 3/4-inch thick.
- Cut ropes into 1-inch pieces. Optionally roll pieces over a fork to create ridges.
- Boil a large pot of salted water. Cook gnocchi in batches until they float (2-3 minutes).
- Remove with slotted spoon and sauté in heated oil or vegan butter for 2-3 minutes until golden.
Notes
Let sweet potatoes cool before mashing to avoid sticky dough. Don’t overmix to keep gnocchi light. Use flour sparingly to prevent dense texture. You can freeze uncooked gnocchi and boil from frozen.
