  • 2 tablespoons olive oil
  • 1/2 cup zaatar spice blend
  • 1/4 cup olive oil (for topping)

  • Optional: 1/4 cup sliced black olives
  • Optional: 1/4 cup diced tomatoes
  • Optional: 1 tablespoon chopped fresh mint

Instructions

  1. In a large mixing bowl, combine the flour, salt, sugar, and instant yeast.
  2. Gradually add warm water and olive oil to the dry ingredients, stirring to form a dough.
  3. Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  5. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  6. Once the dough has risen, punch it down and divide it into 4 equal portions.
  7. Roll each portion into a ball and then flatten into a round disk approximately 1/4 inch thick.
  8. In a small bowl, mix the zaatar spice blend with 1/4 cup olive oil to form a paste.
  9. Spread the zaatar paste evenly over each dough disk, leaving a small border around the edges.
  10. Transfer the prepared disks to the baking sheet.
  11. Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown and the topping is bubbling.
  12. Remove from oven and allow to cool slightly before serving.

Notes
