Description
A traditional Middle Eastern flatbread topped with a fragrant blend of zaatar and olive oil, baked until golden and aromatic.

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon instant yeast
- 3/4 cup warm water
- 2 tablespoons olive oil
- 1/2 cup zaatar spice blend
- 1/4 cup olive oil (for topping)
- Optional: 1/2 cup crumbled feta cheese
- Optional: 1/4 cup sliced black olives
- Optional: 1/4 cup diced tomatoes
- Optional: 1 tablespoon chopped fresh mint
Instructions
- In a large mixing bowl, combine the flour, salt, sugar, and instant yeast.
- Gradually add warm water and olive oil to the dry ingredients, stirring to form a dough.
- Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
- Once the dough has risen, punch it down and divide it into 4 equal portions.
- Roll each portion into a ball and then flatten into a round disk approximately 1/4 inch thick.
- In a small bowl, mix the zaatar spice blend with 1/4 cup olive oil to form a paste.
- Spread the zaatar paste evenly over each dough disk, leaving a small border around the edges.
- Transfer the prepared disks to the baking sheet.
- Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown and the topping is bubbling.
- Remove from oven and allow to cool slightly before serving.
Notes
Use high-quality zaatar and olive oil for the most authentic flavor. Don’t overload the topping to keep the bread crisp and avoid sogginess.
