Description
A warm and aromatic Middle Eastern flatbread topped with tangy zaatar spice, perfect for any meal of the day.
Ingredients

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 teaspoons active dry yeast
- 3/4 cup warm water
- 2 tablespoons olive oil
- 1/2 cup zaatar spice mix
- 1/4 cup extra virgin olive oil
- Optional: 1 cup shredded mozzarella cheese
- Optional: 1/2 cup crumbled feta cheese
- Optional: 1/4 cup chopped fresh mint or parsley
- Optional: 1/4 cup sliced black olives
- Optional: 1/4 cup diced tomatoes
Instructions
- In a large mixing bowl, combine the flour, salt, and sugar. Stir to mix.
- In a separate bowl, dissolve yeast in warm water and let sit for 5 minutes until frothy.
- Make a well in the flour mixture, add yeast mixture and olive oil. Mix to form a dough.
- Transfer dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
- Place dough in a bowl, cover with damp cloth, and let rise in a warm place for 1 hour or until doubled in size.
- Preheat oven to 475°F (245°C) and line a baking sheet with parchment paper.
- Punch down risen dough, divide into 4 equal portions, roll into balls, and flatten into 1/4-inch-thick disks.
- Mix zaatar spice with extra virgin olive oil to form a paste.
- Spread zaatar paste over each disk, leaving a small border.
- Add any optional toppings at this stage.
- Place manakish on baking sheet and bake for 8-10 minutes until edges are golden brown.
- Remove from oven and let cool slightly before serving.
Notes
Use warm—not hot—water to activate yeast. Don’t over-knead or over-bake to ensure a light, fluffy crust with a soft, flavorful center.
