Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 teaspoons active dry yeast
  • 3/4 cup warm water
  • 2 tablespoons olive oil
  • 1/2 cup zaatar spice mix
  • 1/4 cup extra virgin olive oil
  • Optional: 1 cup shredded mozzarella cheese
  • Optional: 1/2 cup crumbled feta cheese
  • Optional: 1/4 cup chopped fresh mint or parsley
  • Optional: 1/4 cup sliced black olives
  • Optional: 1/4 cup diced tomatoes

Instructions

  1. In a large mixing bowl, combine the flour, salt, and sugar. Stir to mix.
  2. In a separate bowl, dissolve yeast in warm water and let sit for 5 minutes until frothy.
  3. Make a well in the flour mixture, add yeast mixture and olive oil. Mix to form a dough.
  4. Transfer dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Place dough in a bowl, cover with damp cloth, and let rise in a warm place for 1 hour or until doubled in size.
  6. Preheat oven to 475°F (245°C) and line a baking sheet with parchment paper.
  7. Punch down risen dough, divide into 4 equal portions, roll into balls, and flatten into 1/4-inch-thick disks.
  8. Mix zaatar spice with extra virgin olive oil to form a paste.
  9. Spread zaatar paste over each disk, leaving a small border.
  10. Add any optional toppings at this stage.
  11. Place manakish on baking sheet and bake for 8-10 minutes until edges are golden brown.
  12. Remove from oven and let cool slightly before serving.

Notes

Use warm—not hot—water to activate yeast. Don’t over-knead or over-bake to ensure a light, fluffy crust with a soft, flavorful center.
